Beluga caviar is obtained from the Huso huso sturgeon, the largest and rarest sturgeon species native to the Caspian Sea. This elegant fish can reach a length of up to 3 meters, weigh over 200 kilograms, and requires a considerable maturation period, typically taking 10 to 12 years before it produces caviar.
Known for its smooth, elongated body and powerful presence, the Beluga sturgeon produces the largest caviar pearls, measuring between 3.2 and 3.5 millimeters in diameter. The pearls exhibit a sophisticated color palette, ranging from dark gray to a lustrous silver-gray, with the lighter shades considered the most prized. The flavor profile is rich, buttery, and subtly nutty, offering a taste experience that is both luxurious and unforgettable.
